Zag Dining by Sodexo: Who We Are and What We Do!
Greetings! As the upcoming school year quickly approaches, we, at Zag Dining, would like to take this opportunity to introduce ourselves and what we do at Gonzaga University. The best place for us to start is to share with you our Mission Statement:
Zag Dining’s mission, as a diverse team of talented individuals, committed to consistently delivering extraordinary customer service is to support our valued partnership with the Gonzaga University community by providing:

We truly believe in our mission and strive to practice it every day through our actions, food and customer service at all of our locations on campus and through our community efforts. Here is what we offer on Gonzaga’s Campus:
The Marketplace and Marketplace Express: An all you care to eat restaurant located in the COG (Center of Gonzaga) as well as in Cataldo, located on the West Side of Campus. These locations boast a variety of options such as a permanent Vegetarian and Vegan action station at every meal, a Grill where beef, turkey and vegan burgers are always sold as well as grill specials, grilled cheese and chicken. Made to order sandwiches and salads at lunch and dinner as well as made to order pasta at dinner. The Marketplace also always serves many different international dishes every day and night. Breakfast and Brunch provide a made to order omelet station, an oatmeal bar and fresh fruit and veggies. Our executive chef is Thomas Morisette who works very closely with students and our resident dietician to ensure all their dietary needs are met. We always have many gluten free and vegan options available and always take special care of anyone with ANY dietary restrictions. Chef also will be hosting Saturday Cooking classes to teach students how to cook healthy on a budget quickly! The Marketplace is also where we celebrate all different heritage months, holidays as well as international promotions, sporting events and contests. Students can use their Meal Plans, Bulldog Bucks, Dining Dollars, Cash or Credit to eat at these locations.
But that’s not all…! Here is a list and a brief description of all of our Retail Locations which all accept Dining Dollars, Bulldog Bucks, cash and Credit.
–Spike’s & Freshens-A traditional grill and smoothie/frozen yogurt bar. Spike’s is home to the widely popular Gary’s BBQ on Thursdays as well as a unique special every day on the grill. The menu also features different items that student’s themselves have created. Spike’s is also open 24 hours on the weekends. Located in the basement of the COG.
-SubConnection-A made to order sandwich shop featuring fresh sandwiches (cold or warm) and salads. SubConnection also boasts a mobile app where students can pre-order and pay for their meal ahead of time and pick it up at their desired time. Gonzaga was a test location for the app! Check it out here. Located in the basement of the COG.
-Jazzman’s Café-Fair Trade Coffee and Tea Café, as well as serving homemade baked goods all day long! Jazzman’s also offers a mobile app for online ordering and paying so that your coffee or treat is ready for you when you arrive! Check it out here. Located in Cataldo on the West Side of Campus.
-Crosby Café-A Fair Trade full service coffee shop serving Spokane’s local Craven’s Coffee and Two Leaves and a Bud Tea. Crosby Café also serves Simply-To-Go food items such as sandwiches, muffins, cookies, yogurts and other homemade treats. Located on the main floor of Crosby Student Center.
-Panda Express- is a fast casual restaurant chain serving American Chinese cuisine and is the largest Chinese Food Chain in the US. It is located in Cataldo on the West Side of Campus.
-LoCro Market- A fully stocked convenient store focusing on organic and fresh food and drinks. LoCro also serves Simply-To-Go items for a quick grab and go lunch as well as fresh, homemade soups. Located on the Lower floor of Crosby Student Center.
-Iggy’s Pizza-A pizza delivery service all made from scratch by Zag Dining right here on Campus. Iggy’s delivers directly to dorm rooms and off campus housing or can be picked up at Cataldo.
-Freshens Martin Centre-Full service Smoothie and Frozen Yogurt bar conveniently located in Rudolph, the work out facility.
– Barney’s Café- A Fair Trade full service coffee shop serving Spokane’s local Craven’s Coffee and Two Leaves and a Bud Tea. Barney’s also serves Simply-To-Go food items such as sandwiches, muffins, cookies, yogurts and other homemade treats. Located in Coughlin Hall on the East Side of Campus
-Duff’s Bistro-Serving grill items as well as burritos, smoothies and coffee. Located in Kennedy Apartments on the West Side of Campus.
– Tilford’s – A Fair Trade full service coffee shop serving Spokane’s local Craven’s Coffee and Two Leaves and a Bud Tea. Tilfords also serves Simply-To-Go food items such as sandwiches, muffins, cookies, yogurts and other homemade treats. Located in the Tilford Center on the West Side of Campus.
– McCarthy Athletic Center Concessions-All food items and concessions sold during Men’s and Women’s basketball games. Our concessions offer items like Pulled Pork Sliders, Made to order Burritos, the Kennel Carvery featuring fresh carved turkey, roast beef and ham sandwiches, Ben and Jerry’s Ice Cream, Pizza, Hot Dogs and much more! Located in the MAC/Kennel.
– Patterson Baseball Concessions-All food items and concessions sold during baseball games. Traditional fare like hotdogs, popcorn and much more.
-Café Lawte- A Fair Trade full service coffee shop serving Spokane’s local Craven’s Coffee and Two Leaves and a Bud Tea. Crosby Café also serves Simply-To-Go food items such as sandwiches, muffins, cookies, yogurts and other homemade treats. Located in the Law School.

Another program that Zag Dining offers is “Fill My Fridge”. This is a delivery service program where packages of common dorm room food and snacks are pre-ordered for students and Zag Dining delivers them to the dorm rooms. For example, one care package includes breakfast items like granola bars, yogurts, Starbucks Via packs, and cereal. Another includes snack items like Hummus and Pretzel packs, Pop Chips, trail mix, etc. We have 6 different packages that can be ordered and all the orders can be placed at anytime from over the summer till the end of the school year. We can also set up a recurring order so you know your child is always getting their package on the same day every month! Look for more information about preordering in coming weeks!
