Zag Dining’s Better Tomorrow Plan

During this past Fall Family Weekend, many families were able to experience Zag Dining by Sodexo. From the expansive Marketplace at the BARC, to the eclectic bistros, the Gonzaga campus is full of options. These dining facilities have more to offer than what meets the eye though. Take a look behind the kitchen doors and what you will find is a Better Tomorrow.
Our Better Tomorrow Plan is Zag Dining’s promise for sustainability by protecting our environment, supporting our local community, and promoting wellness every day! In cooperation with Spokane Waste Management and Barr-Tech, we recycle or compost the majority of our waste. Trash cans do not exist in the BARC. Everything is hand sorted to be recycled or composted.
Helping our environment includes lifting up the local community as well. By donating leftover food to Campus Kitchen, Zag Dining supports families here in Spokane. Through numerous outreach programs we are able to affect thousands of people throughout the year.
The students benefit the most from Zag Dining’s dedication to sustainability. Students are given opportunities to support sustainable practices. Cage-free eggs, local produce from our weekly farmer’s market, and fresh baked goods from Spokane’s Shepard’s Grain, are just some of our sustainable options. With access to a Registered Dietician on staff, students’ health goals are now achievable; dietary restrictions are no longer confining.
