Zag Dining  Invites Students to Experience The Mediterranean

For generations, the Mediterranean style of cuisine has given its people a natural gift of wellness.  This January and February, Sodexo will import this gift of wellness to Gonzaga University with its new Mediterranean menu offerings.

With foods rich in fruits, vegetables, whole grains, nuts, beans, olives and seeds, this uber-flavorful diet provides the micro nutrients, antioxidants, vitamins and minerals that our bodies need.  But perhaps the only thing more restorative than Mediterranean cuisine is the Mediterranean lifestyle itself, especially the luxury of its famous beaches. That’s why, to celebrate the Mediterranean menu offerings, Zag Dining is introducing “The Mediterranean Club.”

While we can’t take everyone to an exotic Mediterranean locale, we can deliver the experience of food and life style at The Mediterranean Club.  We thought these winter months would be the perfect time to invite everyone to the ‘beach!’

While at the club guests will enjoy great food and plenty of fun and engaging events including a Bocce Ball competition, a “Design Your Own Beach towel” contest and a “VIP Casino Night.”

Menu options will feature all the benefits of traditional Mediterranean dishes, which help with heart health, weight loss, and diabetes and cancer prevention.  Here is an example of our opening dinner menu:

  • Tuscan Herbed Cod served over a fresh ratatouille vegetable ragout with fennel tomato broth  (Cod is sustainable and this dish is healthy!)
  • Paella Bar– Choose your own assortment of vegetables along with any combination of proteins (chicken, chorizo, mussels and shrimp) sautéed with garlic tossed with saffron rice in vegetable broth and served with grilled flatbread
  • Grilled Lamb Sliders seasoned with garlic, oregano, and feta cheese, grilled and served on warm pita triangles with shaved red onion, tzatziki sauce and tomato along side rosemary parmesan pommes frites. (we will also be serving cous cous sliders for Vegetarian option!)
  • Falafel Sandwich– Falafels served on top of warm pita bread with tzatziki sauce, tahini dressing, shredded lettuce, diced tomato, and shaved onion.
  • Whole Grain Pizza and Mediterranean Flatbreads
  • Tossed Salad Station- introducing our new house made dressings offered everyday Balsamic Vinaigrette, Huckleberry Vinaigrette and Creamy Pesto Dressing
  • Regular Salad Bar– Introducing more organic crudités vegetables, the standard will now be a choice of 8 vegetables (local and organic when available) and at least 2 vegetable will always be grilled and seasoned. We will also be Featuring Local Butter Lettuce from C and S Hydro Huts
  • Whole Wheat Spaghetti which will be offered at least twice a week served with choice of Bolognese sauce or basil marinara sauce
